ÇALVEZ, ( dee'az,) a Brazilian poet, в. 1823. In 1848 he was appointed profe or of history in the college of Don Pedro II. His poetry is very popular in Brazil, and greatly esteemed in Portugal. Di'astase, n . [Gr. dia , and istemi , I place.] ( Chem .) A white, amorphous substance generated during the germination of barley, wheat, ., which tends to accelerate the formation of sugar during the fermentation of worts. It is precipitated from infusions of bruised malt by alcohol. It is the principle which, by its reaction on starch, tends to its conversion into dextrine and glucose, 1 part of it being sufficient for the conversion of 2,000 parts of starch.
