Levulose is more soluble in alcohol than dextrose. Both dextrose and levulose in con- tact with yeast undergo vinous fermentation, and when added to a solution of cupric sulphate, ren- dered alkaline by caustic potash, gives a dark-blue solution, which, when boiled, is reduced, cuprous oxide being precipitated as a red powder.
