All kinds of animal brains are esteemed as delicacies, but beef, calves’, sheep’s, and pork—the second being the choicest—are the kinds chiefly retailed. In southern cookery, the preference is generally given to sheep’s and lambs’ brains. They should be bright in color and firm.
