ARROW ROOT

The commercial name of the starch obtained by washing the grated root of the masanta a rund in ace a, which it yields to the amount of twenty-five to thirty per cent. It is sometimes adulterated with potato starch, and the fraud is nut easily detected; it, however, gives a disagreeable flavour and smell, like that of the raw potato, and forms a le firm jelly with hot water than when the arrow root is genuine.
