Artemas Ward OCR'd text, digitized from a scanned copy. The embedded text layer in this PDF extracted words in a scrambled order on many pages, so this edition was built instead from fresh image-based OCR of every page. Blank plate backs were dropped, and remaining full-page color and black-and-white plates are included as images rather than transcribed text. A multilingual culinary-terms glo ary near the end of the book (too tabular to transcribe reliably) is included as an image appendix. Front matter and the very back matter were omitted. A pa was also run to strip stray OCR noise picked up from inline illustrations, and page running-heads that had leaked into entry text; a little scattered noise may still remain in a handful of entries.
