a vinegar pickle which includes a variety of vegetables, as cauliflower, onions, etc. MOCK-TURTLE (thick): a strong flavored soup now sold in cans, containing diced calf’s head meat, etc., in a thickened brown soup stock, flavored with various vegetables, herbs and spices, lemon juice, Madeira or sherry, etc. Clear Mock-Turtle is similar in flavor and character ingredients, but the liquid is of consommé type.
