a variety of milk-sugar or lactose formed by boiling it with dilute acid, which is frequently employed in the ripening of cheese. Old cheese is a predigested food, largely as the result of the action of galactose, which will continue working at low temperatures in which bacteria are practically inert. [s. 267]
