(gluf-ten) [gluten, glue]. A nitrogenous substance found in the seed of cereals. It consists mainly of gluten-fibrin, gluten case in, gliadin, and mucedin. G. -bread, bread made from wheat-flour from which all the starch has been removed; it is used as a substitute for ordinary bread in diabetes. 298
