Ethereal Salts

Compounds, composed of an alcoholic or hydrocarbon radical united with an acid group; e.g., ethyl acetate, CH,COO.C2H. Mostly they are liquids or solids having a pleasant odor and taste, found in flowers and fruits. They are made by introducing an alcoholic radical in an acid, and used as artificial flavoring extracts; also known as compound ethers and esthers.
