One of the rooms in a sugar-refinery, usually on the top floor, where the raw sugar is first melted.- Blow-up pan, in sugar - refining , the in which the sugar, after being sifted, is placed with water to be di olved. At the bottom of the pan is a perforated steam-pipe through which steam blows up through the solution; hence the name of the pan and of the room in which the operation is carried on.
