or Filet. (1) A market term for the tenderloin (see Brrr and Pork). (2) A culinary term for a strip or band of meat or fish without bone. Filet mignon is a small tenderloin steak. “FINGER ROLLS,” or Salt Sticks, or Soup Sticks, Italian bread made in stick form, from twelve to eighteen inches long. The term is also applied to finger-shapes of crusty bread, cut in various sizes and thickne es, to be eaten with soup.
