FLESH

a compound substance forming a large part of an animal, consisting mainly of the muscles, with connective ti ue, and the _ blood ve els and nerves supplying them. It consists chiefly of fibrin, with albumen, gelatin, hamatosin, fat, phosphate of sodium, phosphate of pota ium, phosphate and carbonate of calcium, sulphate of pota ium, and chloride of sedium. The solid part is, besides, permeated by an alkaline fiuid, called fiesh-juice. It has a red colour, and contains di olved a number both of organic and inorganic substances. The organic matter consists of albumen, casein, ercatine, and creatinine, inosic and several other acids; the inorganic, of alkaline sulphates, chlorides, and phosphates, with lime, iron, end magnesia.
