It is useful during convalescence. To make it take cornflour two ounces, milk a pint, sugar one ounce. Mix the cornflour into a paste with a little cold milk and when the rest of the milk Boils, stir in the cornflour and boil until the original quantity has been reduced by two-thirds; add the sugar and pour into a mould and allow to set.
