See the article on the Swerrsreap, PANCREATIN, a substance obtained from the pancreas of various animals, the best being from that of the pig. It digests albuminoids, emulsifies fat if an alkaline solution is present, and (except when from the calf) converts starch into digestible sugars. Because of the last-named quality it is more generally effective than Prrsin (which see) as a remedy for indigestion. ‘‘Peptonized’’ gruels and soups, useful in eases of debility, may be foods partly digested by pepsin and hydrochloric acid but are preferably those treated with pancreatin.
